
CLASSIFICATION: typical geographic indication
PHILOSOPHY OF PRODUCTION: following the tradition of the Valpolicella production of 'passito' white wines, we want to suggest the sweet grapes Garganega and Trebbiano Toscano, with clear characteristic signs of honey and dried fruits, which become spices in the course of their maturation.
VINE: Garganega 40%, Trebbiano Toscano 60%.
VINIFICATION/REFINEMENT: after the drying process of about 5 months, the stalks are removed from the grapes and the grapes are pressed. The must is decanted naturally for 10/15 days. Then it is put into barrels of 350 litres, where it ferments without the use of selected leaven and stays for at least 36 months without any intervention.
DESCRIPTION: yellow with golden reflection. Fragrance that reminds of dried fruits, honey and spices. Complexity whose fragrance is confirmed in the mouth, with ulterior spices and a persistent aftertaste, with characteristic signs of minerals and flint.
COUPLING: white dessert wine to couple with dry sweets, plain chocolate, cheese with blue-green marbling, dried fruits or for meditation
